Foundations of Flavor: Onions & Garlic
Many great savory dishes start the same way: with the sizzle of onions and the aroma of garlic hitting a hot pan. These humble ingredients are the aromatic "foundations of flavor"—the invisible backbone that transforms an ordinary meal into a something special. In this workshop, we move beyond the "chop and drop" method. You’ll learn how time, temperature, and technique change the chemical makeup of onions and garlic to create different flavor profiles. Using onions and garlic that we planted at Cabarrus County's own Lomax Farm in the fall, we'll create a menu of items to savor, reviewing precision knife skills for chopping, dicing, and mincing along the way. We'll end by discussing growing techniques, selection and storage tips, and nutritional tidbits while enjoying our creations.
